Morning Carrot Muffins



I dream of starting most of my days with a nice warm homemade muffin and a coffee. Is this attainable for me? Absolutely! Is it the best thing for my body everyday? Not in my books. However...it does make for a wonderful afternoon snack while our boys are napping:)

I love muffins...our boys really love muffins, or 'mops' as Levi calls them. I have a few standby recipes that always give great results...but for the most part I love to try something new every time. This week I've been craving a nice moist and healthy carrot muffin...I have no idea why...just am. I was watching the Food Network while running at the gym on Monday...that's almost an oxymoron!...and Giada was making a version of these. I would have totally made her muffins if I would have been able to write down the recipe...or find them online...but neither option worked! She did such a great job, they looked amazing. So here's my version of them. I know she used shredded zucchini instead of the banana...but I went with what I had on hand:) They turned out amazing...very pleased. Hope you enjoy them as much as we did! In fact...these are so healthy you could definitely start your day with them!

Morning Carrot Muffins


INGREDIENTS

1 1/4 cups flour(I used 3/4 cup brown rice flour & 1/2 cup almond flour)
1/2 cup maple syrup or honey
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1 cup oats
1/2 cup raisins (optional...but add sweetness)
3 Tbsp olive or coconut oil
1 egg
1/3 cup almond milk
4 medium shredded carrots
1 medium ripe mashed banana

DIRECTIONS

Preheat oven to 350 degrees.

In a large bowl, mix together flour, baking soda, baking powder, nutmeg, cinnamon and salt. Stir in oats, syrup and raisins. Add oil, egg, milk, carrots, and banana and stir until blended.

Fill muffin tin with batter. Bake until a toothpick inserted in center of a muffin comes out clean, 23 to 25 minutes.

Roasted Vegetable Soup


Well...apparently my readers are fans of soup! So here's a second recipe for the week! Made this one for supper last night...and all four of us were huge fans of it! I often grab a bunch of veggies from our fridge, steam them, puree them, add some broth with a little seasoning and attempt to make soup. Sometimes it's amazing, sometimes....it's just soup. Last night I decided to try roasting the veggies first...and let me tell you, it was worth the extra effort! This soup is so simple for the amount of flavour you get...you must try it! It tastes gourmet...seriously...a great and simple way to wow some company:) You'd pay top dollar in a grocery store or restaurant for this soup! Fancy grilled cheese would be a great add-on to this meal! Garnished mine with fresh ground pepper and a swirl of homemade spinach humus:)

Roasted Vegetable Soup

INGREDIENTS

6 sweet potatoes, peeled and cubed into 2-inch chunks
4 carrots, cut into large chunks
4 parsnips, cut into large chunks
1 bundle of celery, cut into chunks
2 sweet red peppers, seeded
Extra virgin olive oil
Salt and freshly ground black pepper
1 tsp nutmeg
1 bulb garlic, peeled
2 boxes of chicken or vegetable stock

DIRECTIONS

Preheat oven to 425 degrees.

Prepare all vegetables and garlic.

Toss lightly with olive oil, salt and pepper, and nutmeg. Place veggies and garlic cloves in baking dish...it may take more than one...lightly cover with tin foil so the veggies don't dry out.

Roast in oven for 40-45 minutes. Veggies and garlic should looks nice and caramelized...and be soft enough to puree.

Let cool slightly. Puree using food processor, in batches, gradually adding stock.

Pour pureed soup/stock mixture into a large pot and heat. ENJOY!

*This soup tastes even better the next day...and freezes amazing!

Brown Rice Noodle Salad with "Best Ever" Cilantro Peanut Dressing






Well...truth be told we plan vacations around the nearest Chipotle and Cheesecake Factory. We go to the Cheesecake Factory to SHARE this amazing huge salad that has an amazing dressing on it...it's our favourite thing. We even order an extra dish of it to dip our bread into!! Obsessed? Maybe a tad:) We just know when something tastes good:)

I finally decided that it was time to replicate this dressing! This was my first shot at it...for company Friday night (always a risky thing to try something new for company!!)...but it was a success if I do say so myself! The salad complimented it well too, although I forgot to take a picture of the massive platter that I created the salad on!!...so I recreated a smaller version the next day and took a photo. This salad was our complete meal, with chicken skewers on the side. An amazing and affordable meal to entertain with...just be sure your guests like cilantro!!

As a side note...the salad we order this dressing with at Cheesecake Factory is nothing like this one, it's more of a Mexican tostada type salad...but it went REALLY well with this style of salad too!

The brown rice noodles I used are a healthier alternative to the white rice noodles often found in Thai food. They can be tricky to find, so white would totally work as well. In Kelowna, they are available at Choices, Superstore and Bulk Food Store (listed most $ to least $). I usually stock up when I find them:) They are great to keep on hand for a quick stir-fry dinner or whatever (soak dried noodles in hot water for 5 minutes...done!).

Brown Rice Noodle Salad


Layer any amount of the following things...options are endless...this is what I used:
Brown Rice Noodles (soaked and left to dry so wetness is gone)
Spinach/Lettuce
Chopped Carrots
Garden Fresh Peas
Sprouts of any kind...I used Alfalfa and Sunflower
Shredded Red Cabbage
Sliced Cucumbers
Chopped Cilantro..we are fans:)
Chopped Mango
Chopped Cashew Pieces

"Best Ever" Cilantro Peanut Dressing
(substitutions in bold italics make this dressing Whole30 friendly!)

3 whole big cloves of garlic
1 Tbsp fresh ginger
2 bunches cilantro, (rinsed well, most of stalk ends trimmed off)
1/2 cup fresh lime juice
1 1/2 tsp wine/rice/apple cider vinegar
1/2 tsp ground cumin
3/4 tsp salt
1/2 tsp freshly ground pepper
1 Tbsp honey (brown rice syrup to make it a vegan dish) 1 softened date
1/2 cup olive/avocado oil
3-4 Tbsp peanut butter almond butter
1-2 Tbsp tamari (soy sauce) coconut aminos
Dashes of hot sauce...whatever your liking:)

Throw all ingredients into food processor, except olive oil. Once everything is pureed and blended, slowly stream olive oil in so that the dressing becomes emulsified:)

I now wish I would have tripled the amount of cilantro I grew this year...I will be making this dressing weekly!! If you're not fans of cilantro, you could try making it with parsley. Results would be similar, but likely not as good:)

Enjoy...invite company over for this one:) A great summer meal to enjoy on the patio with some Sangria...that's what we did!!

Roasted Vegetable Lasagna



I found myself craving some comfort fall food today...but it was hard to think in those terms when it was so sunny and warm! So...I took inventory of our garden, and the stock in our fridge from Saturday's market...and thought up this lovely dish! The term 'roasted' often scares me away from recipes, because I know it involves an extra step, and I often think that I just don't have time for that. Today however, I proved myself wrong. I learned that 'roasting' does involve an extra step, but it's really not all that much extra work! The flavour is the reward...and flavour is always worth the time!

Now, although this is a vegetarian dish, you could certainly add ground beef or turkey to the sauce. You could also easily make this a vegan dish...I just love my cheese though:) This is however a 'light on cheese' recipe compared to some. We find that a bit of ricotta in the layers...and then some fresh parmesan on top does the trick for us! LOTS of flavour....you won't even miss all the melted goop that you usually find inbetween!

So while our boys were napping, I gathered all the vegetables, washed them up, and sliced them so they were ready to go. I used carrots, beets, zucchini, vidalia onion, red pepper and garlic. This was just what we had on hand...I can definitely think of some others that would make a wonderful addition!




Then I realized that I might as well roast them already too, and get that step out of the way! I simply tossed them lightly in olive oil, sprinkled pepper on top...and roasted them at 425 for about 30 minutes. It was actually kind of nice to have them done and cooled ahead of time...made them easier to work with.



Don't they look amazing? Look at all that yummy goodness! I was so tempted to just grab a fork and dig in! See those fingers in the top corner? That's Noah..gotta love that a 2 1/2 year old finds sneaking roasted beets to be a real treat!

While they were roasting, I remembered that I had frozen some homemade pasta sauce (tomatoes from the garden, chopped and simmered with basil and garlic..simple enough!) last week...so I pulled out a bag to use for the lasagna.



Then it was time to assemble. I always use brown rice lasagna noodles....they can be tricky to find, but they taste awesome and they cook up so well...you'd never notice the difference!



Started layering...sauce, noodles, ricotta, roasted veggies,



fresh spinach,



sauce, noodles,



etc until the pan was filled to the top.



Now bake in the oven at 425 for about an hour...keep checking the noodles for 'doneness'...rice noodles aren't so yummy if they are over-cooked:)



Need this meal in a hurry? Use good quality jarred tomato sauce, and jarred roasted peppers.

ENJOY...we sure did! Pair this with a nice Okanagan red wine...and you've got a gourmet dinner on your hands!

I got "two thumbs up" tonight over this dinner...now I think I'll go pull a couple of those Chocolate Zucchini Muffins out of the freezer for dessert!
